Banana Chocolate Chip Muffins
This is basically our recipe for easy, moist banana bread with a few delicious additions... mini chocolate chips and sparkling sugar on top! The chocolate chips add a nice sweet texture and the sugar adds a crunch on top that we love in a muffin! Perfect with a pat of butter and a tall glass of milk!
Cook Time: 15-20 minutes
Serving Size: 16 muffins
1/2 cup unsalted butter, softened to room temp
1 cup granulated sugar
2 eggs, lightly beaten
4 bananas, mashed
1/2 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup mini semi sweet chocolate chips
sparkling sugar (for sprinkling on top)
Preheat oven to 350 degrees. Sift together the flour, baking soda, and salt and set aside. In a large bowl, cream together your butter and sugar. Once mixed well, add in the eggs, vanilla, and mashed banana. Combine well. Mix in the dry ingredients until just combined. Stir in chocolate chips. Divide batter among the wells of your USA Pan 12 cup muffin pan. Sprinkle the tops with sparkling sugar. Bake in preheated oven for approximately 15-20 min, until the batter is no longer wet and the muffins are cooked through. Remove from oven to cooling rack. Once cooled, remove from pan. ENJOY!!
