These classic french pastries will leave you wanting more. Soft, cakey, and dipped in chocolate will satisfy any sweet tooth.

Ingredients3/4 cup flour
1 teaspoon baking powder
pinch of salt
1/2 cup sugar
1 Tablespoon honey
6 Tablespoons melted butter
melted semi-sweet chocolate (optional)
finely chopped toasted almonds (optional)
Mix together the flour, baking powder, and salt and set aside. In a mixing bowl, mix together the eggs, sugar, and honey. Mix this for 5-8 minutes, until batter is light yellow. Fold in the flour mixture. Next, fold in the melted butter. Refrigerate batter for 1 hour. After 1 hour, pull batter out and preheat oven to 400 degrees. Give batter a stir. We like to pour our batter into a pastry bag or plastic bag with end snipped off for easy filling. Fill each well of your USA Madeleine pan with 3/4 batter. Bake for about 8 minutes, until cakes are set and brown around edges. Remove from oven to cool slightly in pan. When cool enough to handle, pop cakes out of pan. These are best served warm. Or, cool the cakes and dip in melted chocolate. We've used melted semi-sweet chocolate with toasted chopped almonds for ours.
