Zucchini Bread

This chocolate loaf cake is loaded with chocolate, chocolate chips, and zucchini. Although, one taste and you'd never know it's full of vegetables! The zucchini makes this one super moist!

1 1/4 cup all purpose flour
1 teaspoon baking soda
1/2 cup cocoa powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup granulated sugar
1 egg + 1 egg yolk
1/2 cup melted butter
1 teaspoon vanilla extract
2 cup grated zucchini (1 large zucchini should be sufficient)
2/3 cup chocolate chips

Recipe Instructions

Preheat oven to 350 degrees In a large bowl, whisk together the flour, baking soda, cocoa powder, cinnamon, and salt. Set aside. In a separate bowl, whisk together the sugar and egg until smooth. Add in the melted butter and mix well. Next, add the vanilla extract. Gradually incorporate the dry ingredients until just mixed. Then, stir in the chocolate chips. Bake in preheated oven for 50 min or until cake tester comes out clean, except for the melted chocolate from the chips! Cool completely before serving.
