Bacon Cheddar Potato Skins

Our half sheet pan is all you need to make these delicous, cheesy potato skins. Perfect for a party appetizer or for the big game, these potato skins are crispy on the outside and flavorful on the inside. Use our half sheet pan to also make the bacon to avoid a greasy, spattering mess on your cooktop!

Ingredients

4 large baking potatoes, washed thoroughly- coated with oil, salt and pepper
3 Tablespoons vegetable oil
1 Tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon black pepper
8 bacon strips, cooked, cooled and chopped
1 1/2 cups of shredded cheese (you can use your favorite)
Optional-
sour cream and sliced green onions to top

Recipe Instructions

Preheat your oven to 350 degrees. Line your USA Pan with foil or parchment (this is not a reflection on the non-stick, but the oil from the potatoes can negatively affect the pan). Anytime you are baking high fat/greasy foods on a USA Pan, please be sure to use some sort of lining! Place the potatoes that have been washed on your USA Pan half sheet pan. Prick each potato all over with a fork. Coat each potato with a little vegetable oil, salt and pepper. Bake for about an hour, or until fork tender. Remove from oven to cool. Leave the lining on your pan, as these go back in the oven! Set your oven to 450 degrees. When cool enough to handle, slice each potato in half lengthwise. Scoop out the pulp, leaving a 1/4 inch border around. Save the potato pulp for another use. In a small bowl, mix together the oil, Parmesan cheese, salt, garlic powder, paprika, and black pepper. Brush the seasoning mixture on the inside of the potatoes and set them skin side up on your pan. Then, brush the outside of the potatoes with the seasoning mix. Place the potatoes back in the oven for about 7 minutes. Remove and flip potatoes over. Place back in the oven for another 7 minutes. Remove from the oven and top with cheese and bacon. Return to oven until cheese is melted, only 2-3 minutes. Remove from the oven. Serve with sour cream and sliced green onions, if desired. These are best served warm from the oven. ENJOY!!
