Mini Chocolate Pecan Pies

What's better than pecan pie?? How about chocolate-pecan pie? Mini pies made in our USA Pan mini round cake pan make great individual desserts!

Ingredients

1 cup chopped pecans- toasted
1/4 cup pecan halves
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoon melted butter (cooled)
1/2 cup sugar
1 cup dark corn syrup
3 eggs
1/4 cup flour
1 1/3 cups chocolate chips or chunks

Recipe Instructions

In a mixing bowl, mix together the eggs, corn syrup, sugar, butter, salt, and vanilla. Stir in the pecans and chocolate chips. Cut your pie crust into rounds slightly larger than 6 " and fit into wells of the pan. Pour filling evenly into all 6 wells. Top filling with decoratively with the 1/4 c of pecan halves. Bake in a 400 degree oven for 15 minutes. Then, decrease temperature to 300 degrees and bake an additional 20-25 minutes. Cool pies in pan and once cooled, remove from pans. Serve with whipped cream or ice cream. Store leftovers refrigerated. You can also use this recipe to make one 9" pie.
