Lasagna Cups

These lasagna cups boast a unique presentation and very big flavor! These are great if you don’t want to make an entire pan of lasagna for your family, or if you want to serve individual portions for dinner or a party. Wonton wrappers serve as the “noodles” in this lasagna are then layered with meat sauce and cheese. These cups pack all the flavor of a full sized lasagna. If you want to make it even easier, use a jarred sauce to save time.

Meat Sauce (or you can use your favorite recipe):
2 tablespoon olive oil
1 cup diced onion
salt and pepper
4 cloves garlic minced
1 lb Italian sausage (mild or hot, your choice)
1/4 cup tomato paste
1 (28 ounce can) crushed tomato
1/4 cup chopped fresh basil
Ricotta Filling:
1 egg
3/4 cup ricotta cheese
3/4 cup grated parmesan
1 1/2 cup shredded mozzarella
salt and pepper
1 tablespoon chopped fresh parsley
1 package wonton wrappers

Recipe Instructions

Preheat oven to 375 degrees. Place large skillet over medium high heat and add olive oil. Add the onion and season with salt and pepper. Sauté until softened a bit and then add the garlic. Continue sautéing for about another minute. Add the sausage, working to break it up as it browns. Cook until sausage is no longer pink. Stir in the tomato paste and cook 1-2 minutes. Add the crushed tomatoes and the basil. Simmer, uncovered for about 15 minutes. Cool slightly before filling lasagna cups. Ricotta filling- Stir together the cheeses and egg. Season with salt, pepper, and parsley. Layer one wonton wrapper in the bottom of the wells of your USA Pan muffin tin. Drop 1 tablespoon of meat sauce on top of the wrapper, then add a dollop of cheese filling. Do this to all 12 wells. Add another wonton wrapper (rotate it slightly so the points do not face same direction) and repeat filling. Add 3 layers of meat/cheese. Add final wonton wrapper to top and place some meat sauce on top. Sprinkle each with additional mozzarella and Parmesan. Bake for 20 minutes. Let cool slightly and sprinkle with extra basil, if desired.
