Cinnamon Coffee Cake with Streusel Topping

Ingredients

Cake: 1/2 cup softened butter
1 cup granulated sugar
2 eggs
2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
Topping/Filling:
1/2 cup sugar
2 teaspoons ground cinnamon
2 teaspoons vanilla extract

Recipe Instructions

Preheat oven to 350 degrees. Mix together the filling/topping ingredients and set aside. In a medium bowl, mix together the flour, baking powder, baking soda, and salt, set aside. In a large mixing bowl, cream together the butter and sugar. Add in the eggs and mix well. Alternately add the flour mixture and sour cream to the butter/sugar mixture. Make sure to scape down bowl. Batter will be thick. Spread half the batter into the bottom of your 8 x 8" USA Pan. Sprinkle half the filling over the batter. Carefully dollop the remaining batter on top and spread. Sprinkle remaining filling on top. B ake for about 35 minutes. Remove from oven to cool. ENJOY!!
