Chocolate Mint Brownies
These super fudgey, chocolate mint brownies are topped with a thick layer of mint flavored frosting! Perfect for a change from the typical brownie, or for celebrating St. Patrick's Day!

4 Tablespoons unsalted butter1/4 cup granulated sugar
1/4 cup light brown sugar
1 1/2 cups semi sweet chocolate chips
2 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
2 Tablespoons unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup semi sweet chocolate chips
Frosting:
4 Tablespoons unsalted softened butter
2 cups confectioners sugar
2 Tablespoons milk
1/4 teaspoon peppermint extract
green food coloring
chopped chocolate mint candies for topping (optional)
Recipe Instructions
Preheat oven to 350 degrees. Place 4 Tablespoons of butter with granulated and brown sugar in small saucepan. Heat and stir until combined and butter is melted. Stir in the 1 1/2 cups chocolate chips and stir until melted. In a separate bowl, whisk together the eggs and vanilla. Add the chocolate butter mixture to the eggs and stir to combine. Add in the flour, cocoa powder, and salt. Stir until combines. Stir in the the 1/2 cup chocolate chips. Place batter in your 8 x 8 or 9 x 9 square USA Pan. We've used an 8 x 8 for a thicker brownie. Bake for 25-30 minutes. Cool brownies completely. For the frosting, beat butter until fluffy. Add in the sugar, milk, and extract and beat until thick and creamy. You can adjust the frosting with additional sugar or milk to thin or thick as needed. Add in the green food coloring. Frost brownies and top with chopped peppermint chocolate candies, if using.
