Chocolate Chip Mini Loaves

Talk about delicious! These chocolate chip mini loaves are the perfect mid morning snack or dessert! Soft, tender, and loaded with chocolate chips, these loaves make a nice gift for a neighbor or friend...if you have any leftover!! Our 8 well mini loaf pan bakes the perfect snack sized loaf, and, as always with USA Pan, there is never any worry about sticking or burning!

USA Pan 8 Well Mini Loaf Pan

Ingredients

2 1/2 cups all purpose flour
1 Tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chocolate chips (we used bittersweet, but you can use semi-sweet)
1/2 cup melted butter
1 cup sugar
1 cup buttermilk
2 eggs
2 teaspoons vanilla extract
sparkling sugar for topping, optional

Recipe Instructions

Preheat oven to 425 degrees. In a large bowl, stir together the flour, baking powder, baking soda, salt, and chocolate chips. In a separate bowl, whisk together the melted butter and sugar. Add the buttermilk, eggs, and vanilla to the butter/sugar mixture. Add this to the dry ingredients and stir until just combined. Divide the batter equally among the wells of your USA Pan 8 well mini loaf pan. You will need 2 pans, or to bake in 2 batches. Sprinkle the tops with sparkling sugar, if desired. Bake these at 425 degrees for 5 minutes. Then, lower the oven temp to 375 and bake an additional 15-20 min until a cake tester comes out clean. Allow to cool and then remove from pan. ENJOY!!
