Apple Upside-down Cakes with Caramel Sauce

These mini apple upside-down cakes are a delcious dessert during apple season. Top with homemade caramel sauce and your guests will be happy they wont have to share their personal sized cake!

Ingredients

Yellow cake mix
3 eggs
1 cup water
½ cup vegetable oil
3 granny smith apples
3 Tablespoons water
1/3 cup butter
1 tsp ground cinnamon
2/3 cup white sugar
6 Tbsp butter
½ cup heavy cream
2 tsp vanilla extract
Pinch of salt
1/3 cup dark brown sugar

Recipe Instructions

Preheat oven to 350 degrees. Peel, core, and cut the apples into thick wedges. In a frying pan, melt the 1/3 cup butter then add the sugar, 3 Tbsp water, and ground cinnamon. Cook the mixture over medium heat until foamy, and then add the apples. Cook until apples in the mixture until they begin to soften. Transfer the apples into a USA Pan mini round cake pan so that they cover the bottom of the pan in a single layer and pour some of the syrup from the pan on top to coat the apples. In a large bowl combine your cake mix, eggs, 1 cup water, and vegetable oil and mix according to the directions. Pour the cake mix over the apples filling the pan about three quarters full. Some cake mix will not be used. Bake in the oven for about 15 to 20 minutes or until a toothpick inserted comes out clean. In a frying pan melt the 6 Tbsp butter then add the heavy cream, vanilla, salt, and dark brown sugar to make caramel sauce. Bring mixture to a boil for about three minutes making sure to stir frequently. And allow to cool. Once cake is removed from oven allow to cool before removing from pan. Drizzle with caramel sauce right before serving. ENJOY!!
