1 Double Pie Crust:
2 1/2 cups all purpose flour
1 1/4 teaspoons salt
1/4 cup vegetable shortening
10 Tablespoons very cold, unsalted butter- cut into chunks
6-10 Tablespoons ice water
Strawberry Filling:
5-6 cups hulled, chopped strawberries
5 Tablespoons all purpose flour
1/3 cup sugar
2 teaspoons lemon juice
1/8 teaspoon salt
Blueberry Filling:
2 cups blueberries
2 Tablespoons all purpose flour
3 Tablespons sugar
1/2 teaspoon lemon juice

Recipe Instructions

For Pie Crust: Whisk together the flour and salt. Add in the shortening, working it until the mixture is crumbly. Add the butter into the flour mixture and work it in. It's okay, and even preferable, if the mixture is unever and there are some big chunks of butter among smaller ones. Add in 4 Tablespoons of the ice water and toss to combine. Add in additional water, 1 Tablespoon at a time, until you have a chunky, fairly cohesive mixture. It should hold together when you squeeze your hand. Divide the dough into 2 pieces. One should be twice as large as the other. So, divide the dough into thirds and wrap one-third in plastic and the other two-thirds in plastic. Chill for at least 30 minutes or up to overnight. Roll the larger crust into a 13" round. Place the bottom, larger crust into the bottom of your USA Pan pie pan. Tuck the excess crust under and make a tall crimp to accommodate the filling. Mix together all the ingredients for the strawberry filing. In a separate bowl, mix together all the ingredients for the blueberry filling. Using a piece of folded aluminum foil, block off a 90 degree wedge of the pie. Place the blueberry filling inside the 90 degree wedge and the strawberries into the remainder of the crust. Once you've added all the filling, remove the foil. Next, roll your smaller piece of pie dough into a 10"x6" rectangle about 3/8" thick. Cut the dough, lengthwise into 10" long strips. You'll need to cut 3 stripes shorter. You can do this now, or after baking them. Gather up the remaining dough and re-roll. Using a small star cookie cutter, cut stars from the remaining dough. Place the stars and stripes onto a USA Pan cookie sheet or half sheet pan. Spray these with water and sprinkle with sparkling sugar. Preheat your oven to 425 degrees and place the pie onto the bottom rack of the oven and the stars and stripes onto a rack above the pie. Bake the stars for about 12-14 min and the stripes for about 20-22 minutes. You want them fully baked, but not overly browned. Bake the pie for 30 min and the reduce the oven temp to 375 degrees and continue baking for an additional 45-60 minutes. Remove pie from oven. Cut the stripes to fit onto the pie and then very carefully apply the stars and stripes onto the top of the hot filling. Cool pie completely prior to serving. ENJOY!!
