Pumpkin Chocolate Chip Muffins

1- 15 ounce can pumpkin
4 eggs
2 2/3 cups sugar
1 cup vegetable oil
2/3 cup water
3 1/3 cups flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon nutmeg
1 teaspoon vanilla
bag of mini chocolate chips

Recipe Instructions

Preheat oven to 350 degrees. Mix together oil, sugar, eggs, pumpkin, and water Add the dry ingredients and stir until combined. Stir in the chocolate chips Fill muffin cups 3/4 full of batter. You can use muffin liners if you'd like, or just put the batter right in the pan. Bake about 25-30 minutes until toothpick comes out clean. I got about 28 muffins from this recipe. Cool in the pan. Use a plastic knife to loosen edges if necessary and then remove from pan to cool completely. Store in airtight container. This keeps for several days and is incredibly moist.
