Apple-Cinnamon Scones

This is truly one of our favorite apple recipes! Warm, tender scones with cinnamon and chopped apples! Topped with sparkling sugar for a little added crunch!

1 teaspoon cinnamon
1 tablespoon baking powder
1/3 cup sugar
2 3/4 cup flour
1/2 cup cold butter
3/4 cup chopped apple
3/4 c cinnamon chips
1/2 cup applesauce
1 teaspoon vanilla
2 eggs
3 tablespoons sparkling sugar
1/2 teaspoon cinnamon

Recipe Instructions

Whisk together: 1 teaspoon cinnamon, 1 tablespoon baking powder, 1/3 cup sugar, 2 3/4 cup flour. Work in 1/2 cup cold butter until mixture is lumpy Stir in 3/4 cup chopped apple and 3/4 cup cinnamon chips In a separate bowl, mix together 1/2 cup applesauce, 1 teaspoon vanilla, and 2 eggs Add to dry ingredients until it all holds together Using parchment, or right on the half sheet pan, form into 2- 5 inch circles (about 3/4" in thickness). Put a little flour on pan or parchment first Brush the tops of each circle with milk and then sprinkle with a mixture of 3T sparkling sugar and 1/2 teaspoon cinnamon Cut each circle into 6 pieces and slightly pull apart. If you do this on the pan, use a plastic knife!! If using parchment, transfer parchment with scones to half sheet pan Place into freezer for 30 minutes before baking at 425 for about 18 minutes or until golden brown and baked all the way through!
